Hair straightener temperature: the dial is the whole argument
Keratin begins to change well below the temperatures most straighteners default to, and using heat on damp hair does something worse than drying it out. The numbers that matter.
The short answer
Keratin starts to undergo irreversible change somewhere above about 175°C, with damage rising steeply beyond 200°C. Most straighteners default to 200 to 230°C, which is far more than most hair needs. Fine or damaged hair should sit around 150 to 170°C; coarse or resistant hair around 180 to 200°C. Never use an iron on damp hair — trapped water flash-boils inside the fibre and blows the cuticle open, which is a different and worse kind of damage than heat alone.
Every straightener sold has a maximum temperature it does not need, and most people use it because it is what the device does when it turns on.
The temperature dial is not a preference setting. It is the difference between styling hair and cooking it, and the thresholds are known.
Hair straightener temperature, band by band
Up to about 150°C. Water is driven off. The hydrogen bonds that hold hair in its current shape break and reform as it cools — which is the entire mechanism of temporary styling. Nothing permanent happens to the protein. This is enough to smooth or curl most fine hair.
150 to 175°C. Effective styling for most hair types. The keratin structure remains largely intact. This band is where the great majority of styling should happen, and where nearly nobody sets their iron.
175 to 200°C. Keratin begins to denature. The protein's ordered structure starts to unravel irreversibly, and repeated exposure accumulates. Coarse, dense, resistant hair may genuinely need this range; fine hair does not.
Above 200°C. Damage rises steeply. Melanin degrades, which is why heavily heat-styled dark hair develops a reddish cast. Above roughly 215 to 235°C, keratin approaches its melting range and the fibre's internal structure is permanently altered — this is the temperature at which hair does not recover, it is simply different hair now.
Above 230°C. Straighteners that offer this exist for professional use on specific hair types. On a domestic head, it is a setting for burning hair slightly more efficiently.

The same numbers apply whether the tool is sold as a straightener or a flat iron, and whether its dial is marked in Celsius or Fahrenheit — what the plates do to keratin does not care what the label says.
The damp hair problem
Using a straightener on hair that is not fully dry is the single most damaging common practice in hair care, and it is worse than heat alone.
Water inside the fibre, heated past 100°C by direct contact with a metal plate, turns to steam faster than it can escape. The pressure lifts and ruptures the cuticle from the inside, and in extreme cases produces the phenomenon microscopy calls bubble hair — visible cavities along the shaft. That damage is structural and permanent, and it is why hair sometimes snaps off in a straight line after a session with a hot iron.
The audible sizzle is the sound of this happening. It is not the product working.
Blow drying is different — hot air passing over hair removes water progressively and is the intended way to dry it, though holding a dryer stationary and close does its own version of the same damage.
Heat protectants
They work, and they are not magic.
The good ones do two things: they spread a thin, evenly distributed film that conducts heat poorly, and they contain ingredients that absorb or dissipate energy. Silicones perform well here for exactly the reason they perform well elsewhere — they spread beautifully and have low thermal conductivity. Hydrolysed proteins and certain polymers contribute too.
Realistic expectation: a meaningful reduction in damage per pass, not immunity. A protectant is not permission to raise the temperature; it is insurance on the temperature you were already using.
Three practical notes. Apply to damp hair and let it dry before the iron touches it, unless the product explicitly says otherwise. Distribute it properly — an unevenly applied protectant protects unevenly. And do not substitute a plain oil, which has no meaningful thermal protection and a low smoke point.
Reducing exposure without giving up styling
Lower the dial by 20°C and add a slower pass. Most people find the result identical. This is the highest-value change on the page.
Section properly. The reason people do four passes is that they took too much hair. Thin sections, one pass.
Dry to 80% before the iron. Reduces both total heat time and the risk of trapped moisture.
Stop re-straightening the same hair. Refreshing the roots and leaving yesterday's smooth lengths alone halves the exposure. The ends are your oldest hair and they get ironed every single time.
Take breaks in weeks, not days. Damage accumulates in the fibre and is not repaired between sessions — hair has no repair mechanism, which is the whole reason split ends behave as they do.
What to expect if you have been running hot
Heat damage does not reverse. What you can do is stop adding to it, protect what is there with the friction reduction of a good conditioner, and cut off the worst of the ends over time.
The hair growing out of your scalp right now is undamaged. Everything you change from today applies to it — which is a better way to think about heat than mourning the ends you already have.
Common questions
Does a heat protectant actually work?
Yes, measurably, though it reduces damage rather than eliminating it. Silicone-based protectants perform particularly well because they spread evenly and conduct heat poorly. A protectant does not license a higher temperature.
Is air drying always better?
Not necessarily. Hair swollen with water for hours is under its own kind of stress, and some studies suggest prolonged wetness has costs of its own. A cool or medium blow dry at a distance is a reasonable middle path.
What temperature should a flat iron be?
The same as a straightener, because they are the same tool: 150–170°C (300–340°F) for fine or damaged hair, up to 185°C (365°F) for healthy medium hair, and 200°C (390°F) as a ceiling for coarse resistant hair. Most irons default well above that.
Do temperature-control straighteners help?
They help if you use the control. The value is in being able to select a lower band and hold it, rather than in any particular brand's sensor claims. An iron that only offers "high" and "higher" is the problem, not the absence of a specific technology.
How many passes are safe?
Fewer than you are doing. Damage accumulates per pass, so one slow pass at the right temperature beats four fast ones at the same setting.
